Two skillets that between them cover almost every pan job — eight inches for eggs, ten for everything else.
Tri-ply means an aluminium core pressed between two layers of stainless across the whole pan, not just a disc stuck under the base. Heat travels up the walls too, so there's no hot ring in the middle and no cold edge.
