A blunt steak knife tears meat and shoves it about. A serrated edge with the right tooth spacing grips the crust and goes through in one stroke. These are ground so the teeth bite rather than saw, which keeps the interior intact and the juices where they belong.

• The blades rest 2 mm off the table, weighted deliberately so the edge never touches the cloth between courses.
